Veggie goodness bowl with satay sauce

  • 1/2 can chickpeas- drained and rinsed
  • Paprika
  • Sea salt
  • Handful of cooked edamame beans
  • 1/2 red pepper
  • Handful curly kale
  • Fresh coriander & sesame seeds to garnish
  • 1 tbsp peanut butter
  • 1 tsp tamari/soy sauce
  • 1 tsp honey
  • 1 tbsp lime juice
  • Small pinch grated ginger
  • Chilli flakes- optional
  • Water

Heat a frying pan over a medium heat with a little oil or cooking spray and add in your chickpeas. Season with a good pinch of paprika and sea salt and sauté these until slightly crisp. In another pan, gently sauté your kale to wilt it.Finely dice the pepper and coriander and set aside. For the dressing, combine the peanut butter, Tamari sauce, honey, lime juice, ginger and chilli if using and mix well. Add as much or as little water as needed, to reach a smooth, pourable consistency. To assemble your bowl, layer the kale, pepper, edamame and chickpeas, then drizzle with some of your peanut dressing and finish off with a sprinkling of coriander and sesame seeds.
